- 1 cup tapioca pearls
- 2 cups coconut milk
- 1 cup fresh mango, diced
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Soak tapioca pearls in water for 30 minutes.
- In a pot, bring coconut milk to a boil.
- Add soaked tapioca pearls and reduce heat, cook until translucent.
- Stir in sugar, salt, and vanilla extract.
- Remove from heat and let it cool.
