  • 4 large eggs
  • ½ cup fresh lime juice
  • 2 tablespoons lime zest
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup tequila (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, cream together the butter and sugar until fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the lime juice and lime zest.
  6. In another bowl, combine the flour, baking powder, baking soda, and salt.
  7. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  8. If using, fold in the tequila.
  9. Divide the batter evenly between the prepared pans.
  10. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  11. Allow the cakes to cool for 10 minutes in the pans before transferring to a wire rack to cool completely.
