  • 225 grams softened butter
  • 225 grams caster sugar
  • 4 large eggs
  • 275 grams self-raising flour
  • 150 grams fresh blueberries
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Grease and line a loaf tin with baking parchment.
  3. Cream the butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Fold in the flour and vanilla extract.
  6. Gently stir in the blueberries.
  7. Spoon the mixture into the prepared tin and smooth the top.
  8. Bake for 50-60 minutes, or until a skewer inserted comes out clean.
  9. Allow to cool in the tin for 10 minutes before transferring to a wire rack.
