Mary Berry Glazed French Peach Tart

  • 1 ready-made shortcrust pastry
  • 3 ripe peaches
  • 100g sugar
  • 200ml double cream
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Line the tart tin with the pastry and blind bake for 15 minutes.
  3. Meanwhile, prepare the peach filling by slicing the peaches.
  4. In a bowl, mix the sugar, eggs, and cream until well combined.
  5. Place the sliced peaches into the pastry and pour the cream mixture over.
  6. Bake for an additional 25 minutes or until golden.
  7. Allow to cool and glaze with warm apricot jam.
