- 2 cups cooked quinoa
- 1 pound chicken breast, diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 cup kalamata olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- In a large skillet, heat olive oil over medium heat. Add the diced chicken breast, garlic powder, paprika, salt, and pepper. Cook until the chicken is cooked through, about 7-10 minutes.
