  • 2 cups cooked quinoa
  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 cup kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the diced chicken breast, garlic powder, paprika, salt, and pepper. Cook until the chicken is cooked through, about 7-10 minutes.
  2. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, kalamata olives, and feta cheese.
  3. Add the cooked chicken to the bowl and mix well.
  4. Garnish with fresh parsley before serving.
