This Mexican Beef Pozole is a hearty and easy comfort dish perfect for any occasion.

Ingredients

  • 1 pound beef chuck, cut into chunks
  • 6 cups beef broth
  • 2 cups hominy, drained and rinsed
  • 1 tablespoon vegetable oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup sliced radishes
  • 1/2 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, heat oil over medium heat and sauté onions until translucent.
  2. Add garlic, cumin, oregano, and chili powder. Cook for 1-2 minutes until fragrant.
  3. Stir in beef chunks and brown on all sides.
  4. Add beef broth and bring to a boil. Reduce heat and simmer until beef is tender, about 1.5 hours.
  5. Add hominy and simmer for an additional 30 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot topped with radishes, cilantro, and lime wedges.

Notes

  • This dish can be made a day in advance; flavors develop even more.
  • Adjust the heat by adding more or less chili powder as preferred.
