Mexican Macaroni Salad

A delicious Mexican macaroni salad featuring turkey bacon and chicken ham, perfect for any occasion.

Ingredients

  • 2 cups elbow macaroni
  • 1 cup turkey bacon, cooked and chopped
  • 1 cup chicken ham, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cilantro, chopped
  • 1 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni according to package instructions; drain and set aside.
  2. In a large bowl, combine turkey bacon, chicken ham, cherry tomatoes, red onion, and cilantro.
  3. Add the cooked macaroni to the bowl and mix well.
  4. In a separate small bowl, whisk together mayonnaise, lime juice, cumin, salt, and pepper.
  5. Pour the mayonnaise mixture over the macaroni salad and toss to coat.
  6. Refrigerate for at least 30 minutes before serving.

Notes

  • For a spicier version, add jalapeños.
  • Can be served immediately, but tastes better when chilled.
