- 2 pounds pork tenderloin
- 1/4 cup olive oil
- 3 tablespoons lime juice
- 3 cloves garlic, minced
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 tablespoon smoked paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon fresh cilantro, chopped
- In a bowl, combine olive oil, lime juice, garlic, chili powder, cumin, smoked paprika, salt, and black pepper to create the marinade.
- Place the pork tenderloin in a resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 2 hours, preferably overnight.
- Preheat the grill to medium-high heat.
- Remove the pork from the marinade and discard the marinade.
- Grill the pork for 20-25 minutes, turning occasionally, until it reaches an internal temperature of 145°F.
- Remove from the grill and let rest for 5-10 minutes before slicing.
- Garnish with fresh cilantro and serve.
