  • 2 pounds pork tenderloin
  • 1/4 cup olive oil
  • 3 tablespoons lime juice
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh cilantro, chopped

Instructions

  1. In a bowl, combine olive oil, lime juice, garlic, chili powder, cumin, smoked paprika, salt, and black pepper to create the marinade.
  2. Place the pork tenderloin in a resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the grill to medium-high heat.
  4. Remove the pork from the marinade and discard the marinade.
  5. Grill the pork for 20-25 minutes, turning occasionally, until it reaches an internal temperature of 145°F.
  6. Remove from the grill and let rest for 5-10 minutes before slicing.
  7. Garnish with fresh cilantro and serve.
