Mexican Stuffed Peppers

A delicious recipe for Mexican Stuffed Peppers, filled with turkey bacon and beef.

  • 4 large bell peppers
  • 1 pound ground beef
  • 4 strips turkey bacon, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the turkey bacon until crispy, then add the onion and garlic, cooking until soft.
  4. Add the ground beef to the skillet and cook until browned.
  5. Mix in the cooked rice, diced tomatoes, chili powder, and cumin until well combined.
  6. Stuff the bell peppers with the meat mixture.
  7. Place the stuffed peppers in a baking dish and cover with foil.
  8. Bake for 30 minutes, then remove the foil, sprinkle cheese on top, and bake for an additional 10 minutes.
  9. Serve warm.

Notes

  • For extra flavor, add some jalapeños to the meat mixture.
  • Top with sour cream or avocado for a creamy finish.
