  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 cup red wine
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, mix together olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Rub the mixture all over the beef tenderloin.
  4. In a skillet, sear the beef on all sides over medium-high heat until browned.
  5. Transfer the skillet to the oven and roast for about 25-30 minutes until the internal temperature reaches 135°F (57°C) for medium-rare.
  6. Remove from the oven and let rest for 10 minutes.
  7. In the same skillet, add red wine, balsamic vinegar, and Dijon mustard. Simmer to reduce the sauce.
  8. Slice the beef and serve with the sauce.
