1 cup graham cracker crumbs
1/4 cup unsalted butter, melted
16 ounces cream cheese, softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1/2 cup heavy cream
1/4 cup brown sugar for topping
Instructions
Preheat your oven to 325°F (160°C).
In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of mini cheesecake molds.
In a large bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and heavy cream.
Pour the cream cheese mixture over the crust in the molds.
Bake for 25-30 minutes or until set. Let them cool, then refrigerate for at least 4 hours.
Before serving, sprinkle brown sugar on top and use a kitchen torch to caramelize.
Notes
For best results, use room temperature ingredients.
