  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1/4 cup brown sugar for topping

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of mini cheesecake molds.
  3. In a large bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and heavy cream.
  4. Pour the cream cheese mixture over the crust in the molds.
  5. Bake for 25-30 minutes or until set. Let them cool, then refrigerate for at least 4 hours.
  6. Before serving, sprinkle brown sugar on top and use a kitchen torch to caramelize.

Notes

  • Make sure to cool the cheesecakes completely before refrigerating.
