Mini Pumpkin Pies

Ingredients

  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs
  • 1 can (12 fl oz) evaporated milk
  • 1 package mini pie crusts

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, mix together pumpkin puree, sugar, salt, cinnamon, ginger, and nutmeg.
  3. Beat in the eggs and gradually stir in the evaporated milk.
  4. Pour the filling into the mini pie crusts.
  5. Bake for 15-20 minutes or until the filling is set.
  6. Allow to cool before serving.
