Mint Chocolate Fudge Cheesecake Cake

A delightful dessert combining the rich flavors of mint and chocolate in a cheesecake cake.

  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1 cup sour cream
  • 1 cup chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a springform pan.
  3. In a large bowl, beat together cream cheese and sugar until smooth.
  4. Add eggs, one at a time, beating well after each addition. Mix in vanilla and peppermint extracts.
  5. Stir in sour cream until combined. Fold in chocolate chips.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake for 50-60 minutes or until set. Turn off the oven and let the cake cool in the oven.
  8. Once cooled, refrigerate the cheesecake for at least 4 hours.
  9. Before serving, heat heavy cream and pour it over chocolate to create a ganache. Drizzle over the chilled cheesecake.

Notes

  • For a stronger mint flavor, add more peppermint extract.
  • Ensure all ingredients are at room temperature for better mixing.
