- 2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 1 cup sour cream
- 1 cup chocolate chips
- 1/4 cup heavy cream
- Preheat your oven to 350°F (175°C).
- In a bowl, mix chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a springform pan.
- In a large bowl, beat together cream cheese and sugar until smooth.
- Add eggs, one at a time, beating well after each addition. Mix in vanilla and peppermint extracts.
- Stir in sour cream until combined. Fold in chocolate chips.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 50-60 minutes or until set. Turn off the oven and let the cake cool in the oven.
- Once cooled, refrigerate the cheesecake for at least 4 hours.
- Before serving, heat heavy cream and pour it over chocolate to create a ganache. Drizzle over the chilled cheesecake.

- For a stronger mint flavor, add more peppermint extract.
