Moqueca (Brazilian Fish Stew)

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 can coconut milk
  • 1 tablespoon lime juice
  • 2 tomatoes, diced
  • 1 tablespoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon cayenne pepper
  • 1 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions and garlic, sauté until soft.
  3. Stir in bell peppers and cook for another 5 minutes.
  4. Add the coconut milk, lime juice, and diced tomatoes.
  5. Season with paprika, cumin, and cayenne pepper.
  6. Gently add fish fillets and simmer for 15-20 minutes until cooked through.
  7. Top with fresh cilantro before serving.
