- 2 pounds beef chuck roast
- 1 pound lamb shank
- 3 dried guajillo chiles
- 2 dried ancho chiles
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 4 cups beef broth
- 12 corn tortillas
- 1 cup cilantro, chopped
- 1 lime, cut into wedges
- Salt to taste
- Toast the dried chiles in a dry skillet until fragrant, then soak them in hot water for 15 minutes.
- Blend the soaked chiles with onion, garlic, cumin, and oregano until smooth.
- In a large pot, brown the beef and lamb, then add the blended sauce and beef broth.
- Simmer until the meat is tender, about 2 hours. Shred the meat and reserve the broth.
- Warm the tortillas and fill them with shredded meat, then dip in broth and grill until crispy.
- Serve with cilantro and lime on the side.
Notes
- For extra flavor, marinate the meat overnight.
- Adjust the spiciness of the sauce by adding more or fewer chiles.
