My Fave Birria Tacos

These birria tacos are a delicious and comforting meal that you can easily prepare at home. Packed with juicy flavors and tender meat, they are perfect for any occasion.

Ingredients

  • 2 pounds beef chuck roast
  • 1 pound lamb shank
  • 3 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 4 cups beef broth
  • 12 corn tortillas
  • 1 cup cilantro, chopped
  • 1 lime, cut into wedges
  • Salt to taste

Instructions

  1. Toast the dried chiles in a dry skillet until fragrant, then soak them in hot water for 15 minutes.
  2. Blend the soaked chiles with onion, garlic, cumin, and oregano until smooth.
  3. In a large pot, brown the beef and lamb, then add the blended sauce and beef broth.
  4. Simmer until the meat is tender, about 2 hours. Shred the meat and reserve the broth.
  5. Warm the tortillas and fill them with shredded meat, then dip in broth and grill until crispy.
  6. Serve with cilantro and lime on the side.

Notes

  • For extra flavor, marinate the meat overnight.
  • Adjust the spiciness of the sauce by adding more or fewer chiles.
