No-Bake Blueberry Chia Seed Pie

A delicious no-bake pie featuring blueberries and chia seeds, perfect for summer.

Ingredients

  • 2 cups fresh blueberries
  • 1/2 cup chia seeds
  • 1/4 cup maple syrup
  • 1 cup almond milk
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 prepared pie crust

Instructions

  1. In a mixing bowl, combine the blueberries, almond milk, maple syrup, chia seeds, vanilla extract, and salt.
  2. Stir well and let the mixture sit for about 15 minutes to allow the chia seeds to thicken.
  3. Pour the mixture into the prepared pie crust and spread evenly.
  4. Refrigerate for at least 4 hours or until set.
  5. Slice and serve cold, garnished with additional blueberries if desired.

Notes

  • For a sweeter pie, add more maple syrup to taste.
  • This pie can also be topped with whipped cream or yogurt.
