One Pot Chicken and Sausage Jambalaya

  • 1 pound smoked sausage, sliced
  • 1 cup onion, chopped
  • 1 cup bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken broth
  • 2 cups long-grain rice
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup green onions, sliced

Instructions

  1. In a large pot, brown the chicken and sausage over medium heat.
  2. Add onion, bell pepper, and garlic; sauté until softened.
  3. Stir in tomatoes, broth, rice, Cajun seasoning, salt, and black pepper.
  4. Bring to a boil, reduce heat, cover, and simmer for 20 minutes.
  5. Remove from heat and let sit for 5 minutes.
  6. Fluff rice and stir in green onions before serving.
