  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups potatoes, peeled and cubed
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup cooked turkey bacon, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/2 cup shredded cheese (optional)
  • 2 tablespoons chopped green onions (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until softened.
