  • 1/2 cup buttermilk
  • 2 cups fresh peaches, diced
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/4 cup all-purpose flour
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat the softened butter with eggs and vanilla until creamy.
  4. Add the buttermilk and diced peaches to the wet mixture, then combine with dry ingredients until just mixed.
  5. In a small bowl, mix brown sugar, oats, flour, and cinnamon to make the crumble topping.
  6. Fill the muffin cups halfway with batter, sprinkle with crumble topping, then fill them to the top with remaining batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a sweeter muffin, you can add more sugar to the batter.
