Peach Streusel Muffins

  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 cups diced fresh peaches
  • 1/2 cup brown sugar
  • 1/4 cup flour
  • 1 teaspoon ground cinnamon
  • 1/4 cup cold butter, cubed

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the melted butter, eggs, vanilla extract, and sour cream.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Fold in the diced peaches gently.
  6. In a small bowl, combine the brown sugar, flour, and cinnamon. Add the cold butter and mix until crumbly.
  7. Scoop the muffin batter into the prepared muffin tin and sprinkle the streusel topping over each muffin.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let cool before serving.

Notes

  • For best results, use ripe peaches.
  • These muffins can be stored in an airtight container for up to 3 days.
