- 4 chicken thighs
- 2 cups jasmine rice
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 4 cups chicken broth
- 1 bunch cilantro
- 1 jalapeño, chopped
- 1 lime, juiced
- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking until soft.
- Add the chicken thighs and brown on all sides.
