  • 1 jalapeño, chopped
  • 1 lime, juiced

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking until soft.
  2. Add the chicken thighs and brown on all sides.
  3. Stir in the cumin and then add the rice, stirring to coat.
  4. Pour in the chicken broth and bring to a boil. Reduce heat, cover, and simmer for about 20 minutes.
  5. Meanwhile, blend cilantro, jalapeño, and lime juice in a food processor to make green sauce.
  6. Once the rice is cooked, serve it topped with chicken, drizzled with green sauce.
