Potato and Bean Soup

A delicious and healthy potato and bean soup made with turkey bacon for a cozy meal.

Ingredients

  • 4 cups diced potatoes
  • 2 cups cooked beans
  • 1 cup chopped turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded carrots

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add onions and garlic to the pot; sauté until softened.
  3. Stir in diced potatoes, cooked beans, chicken broth, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the potatoes are tender.
  5. Add shredded carrots and cooked turkey bacon back to the pot; cook for an additional 5 minutes.
  6. Adjust seasoning and serve hot.
