  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 8 ounces cream cheese
  • ½ cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the pumpkin puree, sugars, eggs, and oil until smooth.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Spoon the batter into muffin cups, filling them about 2/3 full.
  6. Add a dollop of cream cheese to the center of each muffin.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
