Pumpkin Dream Cupcakes

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a large bowl, mix together the flour, sugars, baking soda, baking powder, salt, and spices.
  3. In another bowl, whisk together the oil, eggs, pumpkin puree, and vanilla.
  4. Combine the wet and dry ingredients until just mixed.
  5. Fill the cupcake liners about 2/3 full with batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow to cool before frosting as desired.

Notes

  • For a richer flavor, try adding chopped nuts or chocolate chips.
  • These cupcakes can be frozen if you have leftovers.
