Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, combine the pumpkin puree, sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well mixed.
  3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fill each muffin liner with batter about 2/3 full.
  6. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  7. Allow to cool before serving.
