Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 15×10 inch jelly roll pan and line it with parchment paper.
  2. In a medium bowl, mix together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, beat eggs and sugar until thick. Stir in pumpkin and vanilla.
  4. Gradually add dry ingredients to the pumpkin mixture, mixing until well combined.
  5. Spread the batter evenly in the prepared pan.
  6. Bake for 15-20 minutes or until the center is set. Remove from oven and let cool.
  7. While the cake cools, prepare the filling by beating cream cheese, powdered sugar, and vanilla until smooth.
