  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tablespoon chili paste
  • 1 teaspoon cumin
  • salt to taste
  • 2 cups spinach, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, garlic, and ginger; sauté until fragrant.
  3. Stir in vegetable broth and diced tomatoes.
  4. Add chili paste, cumin, and salt; bring to a boil.
  5. Add shrimp and cook until pink, about 5 minutes.
  6. Stir in spinach and cook until wilted.
