Quick and Spicy Shrimp Soup

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup corn, frozen or fresh
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion and garlic, sauté until softened.
  3. Stir in red pepper flakes, cooking for another minute.
  4. Add the vegetable broth and bring to a boil.
  5. Add diced tomatoes and corn, simmer for 10 minutes.
  6. Add shrimp and cook until pink, about 3-5 minutes.
  7. Stir in lime juice and cilantro before serving.

Notes

  • Adjust the spice level by adding more or fewer red pepper flakes.
  • Great served with crusty bread.
