  • 1 cup chopped potatoes
  • 1 cup green beans
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a large pot, sauté onion and garlic until fragrant.
  2. Add carrots, potatoes, and green beans; cook for 5 minutes.
  3. Stir in diced tomatoes, vegetable broth, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
