Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 zucchini chopped
  • 1 bell pepper chopped
  • 1 cup cherry tomatoes
  • 1 carrot diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the quinoa under cold water.
  3. In a pot, combine quinoa and water and bring to a boil. Reduce heat and simmer for 15 minutes.
  4. On a baking sheet, toss the zucchini, bell pepper, cherry tomatoes, and carrot with olive oil, salt, pepper, garlic powder, and paprika.
  5. Roast the vegetables in the oven for 20-25 minutes.
  6. Once the quinoa is cooked, fluff it with a fork and serve it topped with the roasted vegetables.
