Ingredients

  • 1 cup cake flour
  • 1 1/2 cups sugar
  • 1/4 teaspoon salt
  • 12 egg whites
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 cup fresh raspberries

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, sift together cake flour, sugar, and salt.
  3. In another bowl, beat egg whites until foamy. Add vanilla and almond extracts.
  4. Gradually add the flour mixture to the egg whites, folding gently.
  5. Fold in raspberries.
  6. Pour batter into an ungreased tube pan.
  7. Bake for 30-35 minutes, or until a toothpick comes out clean.
  8. Cool upside down in the pan.
  9. Once cool, remove from pan and serve.

Notes

  • For a stronger raspberry flavor, add raspberry puree to the batter.
  • Serve with whipped cream for added indulgence.
