A delicious and comforting twist on traditional Reuben sandwiches, this Reuben Soup combines turkey bacon and chicken ham for a hearty meal.

Ingredients

  • 2 cups turkey bacon
  • 1 cup chicken ham
  • 4 cups chicken broth
  • 1 cup sauerkraut
  • 1 cup Swiss cheese, shredded
  • 1 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy.
  2. Add the chicken ham and cook for another 2 minutes.
  3. Pour in the chicken broth and bring to a simmer.
  4. Add the sauerkraut, Swiss cheese, heavy cream, Worcestershire sauce, garlic powder, onion powder, salt, and pepper.
  5. Stir well and let it simmer for 15 minutes, allowing the flavors to meld.
  6. Serve hot, garnished with additional cheese if desired.

Notes

  • This soup can be topped with croutons for added texture.
  • For a vegetarian version, omit the bacon and ham and use vegetable broth.
