Risotto with Chicken and Asparagus

  • 1 cup Arborio rice
  • 2 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 cup asparagus, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pan, heat olive oil over medium heat and sauté the onion until translucent.
  2. Add garlic and cook for another minute.
  3. Stir in the Arborio rice and cook for 1-2 minutes, stirring constantly.
  4. Gradually add chicken broth, one ladle at a time, stirring continuously until absorbed.
  5. Once the rice is al dente, mix in the chicken and asparagus.
  6. Stir in butter and Parmesan cheese until creamy.
  7. Season with salt and pepper to taste before serving.
