Roasted Carrots with Whipped Ricotta and Hot Honey

Ingredients

  • 2 pounds carrots
  • 1 cup ricotta cheese
  • 2 tablespoons honey
  • 1 teaspoon chili flakes
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the carrots, then cut them into uniform size.
  3. Toss the carrots with olive oil, salt, and black pepper.
  4. Spread the carrots on a baking sheet and roast for 25-30 minutes until tender and caramelized.
  5. While the carrots are roasting, whip the ricotta with honey and chili flakes until smooth.
  6. Once the carrots are done, plate them and top with the whipped ricotta.
  7. Drizzle with more honey and serve warm.
