- 2 cups roasted sweet potatoes
- 4 slices turkey bacon
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup coconut milk
- Preheat your oven to 400°F (200°C).
- Spread the sweet potatoes on a baking sheet and roast for about 25 minutes or until tender.
- In a pot, cook the turkey bacon until crispy. Remove and crumble once cooled.
- In the same pot, sauté the onion and garlic until translucent.
- Add the roasted sweet potatoes, chicken broth, cumin, salt, and pepper. Bring to a simmer.
- Blend the soup until smooth, then stir in the coconut milk.
- Serve hot, topped with crumbled turkey bacon.
