Roasted Sweet Potato Soup

A comforting roasted sweet potato soup made with turkey bacon to create a delightful blend of flavors.

Ingredients

  • 2 cups roasted sweet potatoes
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup coconut milk

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spread the sweet potatoes on a baking sheet and roast for about 25 minutes or until tender.
  3. In a pot, cook the turkey bacon until crispy. Remove and crumble once cooled.
  4. In the same pot, sauté the onion and garlic until translucent.
  5. Add the roasted sweet potatoes, chicken broth, cumin, salt, and pepper. Bring to a simmer.
  6. Blend the soup until smooth, then stir in the coconut milk.
  7. Serve hot, topped with crumbled turkey bacon.

Notes

  • Adjust seasoning to taste.
  • Can be made ahead and stored in the fridge for up to 3 days.
