Roasted Sweet Potato Stacks with Chipotle Sauce

  • 1 cup black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil

  • 1/2 cup chipotle sauce

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and slice the sweet potatoes into 1/4 inch thick rounds.
  3. Toss the sweet potato rounds with olive oil, cumin, paprika, and salt.
  4. Arrange them in a single layer on a baking sheet and roast for 25-30 minutes, flipping halfway.
