  • 2 cups cream cheese, softened
  • 1 cup powdered sugar

  • 1 cup heavy whipping cream

Instructions

  1. In a bowl, combine graham cracker crumbs with melted butter and press into the bottom of a springform pan.
  2. In another bowl, beat the cream cheese until smooth and add powdered sugar and vanilla extract.
  3. In a separate bowl, whip the heavy cream until stiff peaks form and then gently fold into the cream cheese mixture.
  4. Add blue food coloring to the mixture and stir until well combined.
  5. Pour the cheesecake filling over the crust and smooth the top.
  6. Refrigerate for at least 4 hours or until set.
  7. Slice and serve chilled.
