Ruths Chris Key Lime Pie

This delicious and easy-to-make Key Lime Pie is inspired by the famous dessert at Ruth’s Chris Steakhouse.

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup sour cream
  • 3/4 cup fresh key lime juice
  • 1 tablespoon lime zest
  • 3 large egg yolks

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix well and press the mixture into the bottom and up the sides of a pie pan to form the crust.
  3. Bake the crust for about 10 minutes, or until lightly golden. Remove from the oven and let it cool.
  4. In another bowl, whisk together the sweetened condensed milk, sour cream, key lime juice, lime zest, and egg yolks until smooth.
  5. Pour the filling into the cooled pie crust and bake for an additional 15 minutes.
  6. Remove from the oven and let it cool to room temperature before refrigerating for at least 3 hours.
  7. Serve chilled, topped with whipped cream if desired.

Notes

  • For a sweeter pie, adjust the amount of sugar in the crust.
  • Use fresh key limes for the best flavor.
