Salted Caramel Banana Cake

  • 1 cup mashed ripe bananas
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup salted caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the mashed bananas and vanilla extract.
  5. In another bowl, combine the flour, baking soda, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just blended.
  7. Pour half of the batter into a greased cake pan, then drizzle with half of the salted caramel sauce.
  8. Top with the remaining batter and caramel. Swirl gently with a knife.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Allow to cool before serving.

Notes

  • For a stronger banana flavor, use very ripe bananas.
  • Serve with additional salted caramel drizzle on top.
