Ingredients

  • 10 large eggs
  • 1 cup milk
  • 2 cups shredded cheese
  • 1 pound breakfast sausage
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 large flour tortillas
  • 1/2 cup chipotle sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs and milk. Add salt and pepper.
  3. In a skillet, cook the breakfast sausage until browned. Drain excess fat.
  4. In a large baking dish, spread the sausage evenly. Pour the egg mixture over the top.
