Delicious and easy smashed potatoes topped with crispy turkey bacon make for a perfect side dish.

  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1/4 cup olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Boil the baby potatoes in salted water until fork-tender, about 15-20 minutes.
  3. Drain the potatoes and let them cool slightly.
  4. Place the potatoes on a baking sheet and smash each one gently with a fork.
  5. In a bowl, mix olive oil, garlic powder, salt, and black pepper.
  6. Brush the mixture over the smashed potatoes.
  7. Sprinkle chopped turkey bacon on top.
  8. Bake for 25-30 minutes or until golden brown and crispy.
  9. Garnish with fresh parsley before serving.

Notes

  • For extra flavor, add cheese on top during the last 5 minutes of baking.
