- 1 medium butternut squash
- 2 medium sweet potatoes
- 4 pieces turkey bacon
- 1 medium onion
- 3 cloves garlic
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme
- 1/2 cup coconut milk
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the butternut squash and sweet potatoes into cubes and place them on the baking sheet.
- Drizzle with olive oil, sprinkle with salt and pepper, and roast for 25-30 minutes until tender.
- In a large pot, cook the turkey bacon over medium heat until crispy, then remove and crumble.
- Add chopped onion and garlic to the pot and sauté until translucent.
- Add the roasted vegetables, vegetable broth, cumin, cayenne, and thyme to the pot.
- Simmer for 15 minutes, then blend until smooth.
- Stir in coconut milk and adjust seasoning if necessary.
- Serve hot, topped with crumbled turkey bacon.
Notes
- For a vegan version, omit the turkey bacon.
- Adjust the level of spice by modifying the cayenne pepper amount.
