Spicy Butternut Squash and Sweet Potato Soup

A warm and comforting soup that combines the sweetness of butternut squash and sweet potatoes with the savory flavor of turkey bacon.

  • 1 medium butternut squash
  • 2 medium sweet potatoes
  • 4 pieces turkey bacon
  • 1 medium onion
  • 3 cloves garlic
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme
  • 1/2 cup coconut milk

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the butternut squash and sweet potatoes into cubes and place them on the baking sheet.
  3. Drizzle with olive oil, sprinkle with salt and pepper, and roast for 25-30 minutes until tender.
  4. In a large pot, cook the turkey bacon over medium heat until crispy, then remove and crumble.
  5. Add chopped onion and garlic to the pot and sauté until translucent.
  6. Add the roasted vegetables, vegetable broth, cumin, cayenne, and thyme to the pot.
  7. Simmer for 15 minutes, then blend until smooth.
  8. Stir in coconut milk and adjust seasoning if necessary.
  9. Serve hot, topped with crumbled turkey bacon.

Notes

  • For a vegan version, omit the turkey bacon.
  • Adjust the level of spice by modifying the cayenne pepper amount.
