Spicy Mushroom Ramen Noodles with Marinated 7 Minute Eggs

Ingredients

  • 200 grams ramen noodles
  • 300 grams mushrooms, sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 4 cups vegetable broth
  • 2 green onions, chopped
  • 2 eggs
  • 1 tablespoon rice vinegar
  • 1 teaspoon chili oil
  • salt to taste

Instructions

  1. In a pan, heat the sesame oil over medium heat. Add garlic and ginger, sauté until fragrant.
  2. Add mushrooms and soy sauce, cooking until mushrooms are tender.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add ramen noodles and cook according to package instructions.
  5. In a separate pot, boil water and gently add eggs. Cook for 7 minutes, then cool in ice water.
  6. Peel the eggs and marinate in a mixture of rice vinegar and chili oil for 10 minutes.
  7. Serve ramen in bowls, halved marinated eggs on top, garnished with green onions.

Notes

  • Omit eggs for a vegan option.
  • Adjust spice level by adding more or less chili oil.
