  • 12 ounces pasta of choice
  • 2 cups ricotta cheese
  • 2 cups fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a large bowl, combine ricotta cheese, chopped spinach, half of the mozzarella, Parmesan, olive oil, garlic, salt, and pepper.
  4. Add the cooked pasta to the cheese mixture and stir until well combined.
  5. Transfer the mixture to a baking dish and top with the remaining mozzarella.
  6. Bake for 25-30 minutes until the cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving.
