2 boneless ribeye steaks
2 tablespoons olive oil
2 tablespoons unsalted butter
1 shallot, finely chopped
1/4 cup brandy
1/2 cup heavy cream
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions
Heat the olive oil in a skillet over medium-high heat.
Season the steaks with salt and pepper, then cook for 3-4 minutes per side for medium-rare.
Remove the steaks and let them rest.
In the same skillet, melt the butter and sauté the shallot until translucent.
Deglaze with brandy, scraping up brown bits, and then add cream, Worcestershire sauce, and Dijon mustard.
Simmer until the sauce thickens, then return the steaks to the skillet to coat with the sauce.
