Sticky Bourbon Chicken and Fried Rice

  • 2 pounds chicken thighs
  • 1 cup bourbon
  • 1/2 cup soy sauce
  • 1/3 cup brown sugar
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, grated
  • 4 cups cooked rice
  • 1 cup peas and carrots
  • 2 green onions, sliced
  • 2 tablespoons vegetable oil

Instructions

  1. In a large bowl, mix bourbon, soy sauce, brown sugar, garlic, and ginger.
  2. Add chicken thighs to the bowl and marinate for at least 30 minutes.
  3. In a skillet, heat vegetable oil over medium heat.
  4. Add the marinated chicken and cook until browned and cooked through.
  5. Remove chicken and let it rest, then chop into pieces.
  6. Add peas and carrots to the skillet and stir-fry for 3-4 minutes.
  7. Add cooked rice and chicken, stirring until well combined and heated through.
  8. Garnish with green onions before serving.

Notes

  • For a spicier version, add red pepper flakes.
  • Serve with extra soy sauce if desired.
