- 2 pounds chicken thighs
- 1 cup bourbon
- 1/2 cup soy sauce
- 1/3 cup brown sugar
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, grated
- 4 cups cooked rice
- 1 cup peas and carrots
- 2 green onions, sliced
- 2 tablespoons vegetable oil
- In a large bowl, mix bourbon, soy sauce, brown sugar, garlic, and ginger.
- Add chicken thighs to the bowl and marinate for at least 30 minutes.
- In a skillet, heat vegetable oil over medium heat.
- Add the marinated chicken and cook until browned and cooked through.
- Remove chicken and let it rest, then chop into pieces.
- Add peas and carrots to the skillet and stir-fry for 3-4 minutes.
- Add cooked rice and chicken, stirring until well combined and heated through.
