  • 1 cup cream cheese, softened
  • 1 cup strawberries, chopped

Instructions

  1. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Combine the wet and dry ingredients until just mixed; do not overmix.
  4. In a separate bowl, beat the cream cheese until smooth.
  5. Fold in chopped strawberries into the cream cheese mixture.
  6. Preheat a skillet over medium heat and grease lightly.
  7. Pour 1/4 cup of batter onto the skillet for each pancake.
  8. Top with a spoonful of the cream cheese and strawberry mixture.
  9. Cook until bubbles form on the surface, then flip and cook until golden brown.
  10. Serve warm with maple syrup and extra strawberries if desired.

Notes

  • For a sweeter pancake, add more sugar to taste.
  • These pancakes can be made ahead of time and stored in the fridge.
