Street Corn Beef and Sweet Potato Bowls

A comforting and flavorful dish that combines the sweetness of sweet potatoes with savory beef and the unique taste of street corn.

  • 2 large sweet potatoes
  • 1 pound ground beef
  • 1 cup corn, cooked
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork and bake for about 45 minutes until tender.
  3. In a skillet, brown the ground beef over medium heat, adding chili powder, cumin, garlic powder, and salt.
  4. Add the diced red bell pepper and cooked corn to the beef, cooking until everything is heated through.
  5. Once the sweet potatoes are done, slice them open and fluff the insides with a fork.
  6. Top each sweet potato with the beef mixture, avocado slices, and fresh cilantro.

Notes
