- 4 bell peppers
- 1 pound ground turkey
- 4 slices turkey bacon
- 1 cup cooked rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Preheat the oven to 350°F (175°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, cook the turkey bacon until crispy. Remove and crumble.
- In the same skillet, add the ground turkey and cook until browned.
- Add onions and garlic, cooking until softened.
- Stir in the diced tomatoes, rice, crumbled bacon, and seasonings. Mix well.
- Stuff the mixture into the bell peppers.
- Place filled peppers upright in a baking dish and cover with foil.
- Bake for 30-35 minutes, until peppers are tender.
- Remove foil and bake for an additional 10 minutes.
