Enjoy a fun dinner night with these easy and delicious sushi cups that are perfect for both adults and kids.

Ingredients

  • 2 cups sushi rice
  • 2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 pound cooked shrimp, peeled and deveined
  • 1/2 cup diced cucumber
  • 1/2 cup diced avocado
  • 1/4 cup soy sauce
  • 1 tablespoon sesame seeds
  • 1/4 cup sliced green onions

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine rice and water in a pot and bring to a boil. Once boiling, reduce heat to low and cover, cooking for 20 minutes.
  3. In a separate bowl, mix rice vinegar, sugar, and salt until dissolved. Stir into the cooked rice, spreading it out on a baking sheet to cool.
  4. Once rice is cool, fill small cups or molds with rice, pressing down to form a base.
  5. Top each rice cup with shrimp, cucumber, and avocado.
  6. Drizzle with soy sauce and sprinkle with sesame seeds and green onions.
  7. Serve immediately and enjoy your sushi cups!
